Quinoa salad

Introduction

Great for picnics. Very filling. Great for picnics. Very filling.
Number of Servings: 6

Ingredients

    1 1/2 cups quinoa rinsed
    3 cups water
    1 chicken breast cooked and diced or shredded
    1 cucumber peeled, seeded and diced
    1c cherry tomatoes cut in quarters
    1 small red onion diced
    1/4 cup craisins
    2 cloves garlic minced
    1/2 cup plain yogurt
    1/4 cup orange juice

Directions

Bring 3 cups salted water to a boil in pot over medium-high heat. Stir in quinoa. Reduce heat to medium low, cover, and simmer 15 minutes, or until all liquid has been absorbed.
Toss together quinoa, chicken,tomatoes,cucumber, craisins and red onion in large serving bowl. Whisk together yogurt, orange juice and garlic in small bowl. Pour over salad, and toss to coat. Season to taste with salt and pepper. Chill 30 minutes to allow flavors to develop, then serve.
