Potato (Red Potato) Salad

Introduction

A light and zesty potato salad. Ingredients

    741 Grams red potatoes with skin (1.63 lbs), scrubbed, diced (~1/3" cubes)
    80 grams green onions, sliced, include greens (3/4 cup)
    60 grams yellow mustard (4 Tablespoons)
    180 grams Miracle Whip Light (12 T or 3/4 cup)
    1/4 t white pepper
    1/2 t salt
    4 egg yolks
    8 egg whites, diced


Directions

Scrub and dice red potatoes finely (small 1/3-1/2" cubes). Cover with cold water (salting water is optional, but not in nutritional analysis). When potatoes begin to boil, turn down heat and boil four minutes. When completed, turn potatoes out in drainer and let cool. Sometimes, I cool more quickly in the freezer, but never by rinsing with cold water.

Hard boil (10 minutes) 8 large eggs. Cool

When cool, combine remaining ingredients.

Makes about 3 lbs of potato salad: 9 6-oz servings (129 Calories) or 6 8-oz (194 Calories) servings. Complete nutritional data is based on six half-pound servings.

Garnish with sliced red, green, yellow or orange sweet pepper.
