Number of Servings: 4

Ingredients

    1 garlic clove, minced
    6 oz. soba noodles, uncooked
    1 cup frozen shelled edamame
    4 oz snow peas, trimmed
    4 oz carrots, quartered lengthwise into strips
    3 TB rice vinegar
    3 TB low-sodium soy sauce
    1 TB sesame oil
    1 TB prepared wasabi paste or wasabi mayo
    1/2 cup thinly sliced radishes or white turnips

Directions

Cook soba according to package instructions.
Steam edamame, peas, carrots about 4 minutes until crisp-tender.
In a large bowl, combine minced garlic, vinegar, soy sauce, oil and wasabi with a whisk.
Add cooked pasta and steamed veggies and radishes, toss gently and serve.

Serving Size: makes 4 servings, about 1 1/2 cup each
