1-1/2 c heavy whipping cream, divided
1-3/4 c skim milk
1 6" piece of vanilla bean
1 tsp vanilla extract
3/4 cup Xylitol
In medium saucepan, mix 1 3/4 cup skim milk & 1/2 cup heavy whipping cream. Slice vanilla bean, lengthwise. Use blunt end of knife and scrape seeds from pod, adding into milk in saucepan. Add bean pod to mixture, as well. Bring mixture to boil over medium heat. Once mixture boils, reduce heat. Add approximately 1 tsp vanilla extract.
Allow mixture to simmer on lowest heat for approximately 15-20 minutes, stirring often.
Remove from heat. Scrape any remaining seeds from vanilla bean and discard bean. Stir in Xylitol. Allow mixture to cool for approximately 10 minutes, then add additional cup of heavy whipping cream. Mix well. Place in refrigerator to cool for another 20-30 minutes.
Once chilled, follow instruction on ice cream maker and enjoy.
Makes approximately 10 1/2 cup servings.
