Tuna Casserole, GF, SF, Low Carb, Dairy Free

Ingredients

    2, 5oz cans tuna packed in water, drained and rinsed

    1/2 tbsp butter
    1 cup cubed eggplant
    1 tbsp chives or green onions, minced
    1/2 cup diced celery
    1/2 cup chopped mushrooms
    1 tbsp dijon (or other deli style) mustard
    1 clove garlic
    1/4 tsp onion powder
    pepper to taste

    1 1/2 tbsp nutritional yeast
    1/3 cup water or non-dairy milk

    1 1/2 tbsp mayo (homemade or healthy kind!)


Directions

Melt butter in nonstick skillet. Cook eggplant, green onions, celery, and mushrooms in butter until browned and soft. Add in tuna, mustard, garlic, and spices, and stir together. Add in nutritional yeast and water, stir well, and bring to boil. Reduce heat, then add in mayo and stir to mix.

Serve! If you want some crunch, top with sprouted mung beans instead of potato chips :)
