Spinach Balls

Ingredients

2 eggs
1 10-oz pkg frozen spinach, chopped
1/2 c. onion
1/2 c. parmesan cheese
1 c. chicken broth, sodium-free
1/4 t. salt
1/4 t. thyme
1/8 t. nutmeg
dash pepper
1 box stuffing mix
Directions
1. Defrost spinach (can microwave for 5 minutes).
2. Beat eggs.
3. Stir all ingredients together except stuffing mix.
4. When mixed well, then stir in stuffing mix and let it sit 20 minutes.
5. Shape into balls and bake 20 minutes at 350 degrees.
May be cooled, frozen and rehated on cookie sheet 10-15 minutes.
If using as a casserole, cook covered for 20 minutes and then uncovered for 10 minutes.
Serving Size: 112 snack balls or casserole side dish for 8
