Lasagne by Spooky

Introduction

My daughter's favorite! Made with cottage cheese, you get more protein than Ricotta.

Ingredients

    Barilla Lasagne Noodles (12)
    1 cup Lowfat Cottage cheese
    1 small onion chopped fine & sauteed
    1 egg beaten
    2 cloves garlic
    Perri sweet Italian sausage (bulk)
    1 can Delmonte Traditional spaghetti sauce
    1 can Demonte Stewed tomatoes, processed in food processor
    2 oz Mozarella cheese (part skim)

Directions

Brown crumbled ( caseless )Italian sausage & drain.(I like sweet)
Sautee onion & garlic, add to cottage cheese
beat one egg & add to that mixture.

Process stewed tomatoes & add to spaghetti sauce for a light, fresh sauce.
Spread some sauce on bottom of a 9x13 pan.

Boil Lasagne noodles~ taking 12 good ones, lay 3 on the sauce.
Dollop 1/2 cottage cheese mixture on noodles,
layer with 3 more noodles,
sprinkle half sausage on those noodles,
layer 3 noodles,
spread cottage cheese over that, sprinkle with remaining crumbled sausage, top with last 3 noodles,
cover with remaining sauce.

Cover top with Mozarella cheese, cover Lasagne with tin foil, tightly covered.

Bake at 375 for about 45 minutes, or until bubbly on the sides.

Take off tin foil during last 5 mins of baking for browning.
