Real Vegetable Soup

Introduction

All veggies, no meat, no broth All veggies, no meat, no broth
Number of Servings: 6

Ingredients

    8 medium tomatoes
    6 carrots
    6 stalks celery
    2 whole onions
    6 radishes
    1 cup cabbage
    2 whole summer squash (yellow)
    1 can peas (or 1 1/2 cup fresh peas)
    1 tsp seasoning salt

Directions

juice all of the following:
tomatoes
1 peeled summer squash
4 carrots
4 stalks celery
1 whole onion
radishes
1/2 cup cabbage

chop:
2 carrots
2 stalks celery
1 onion
1 peeled summer squash
1/2 cup cabbage

add all to a stock pot and bring to a low boil until carrots are tender

add peas and heat through

season with pepper and a small amount of seasoning salt if desired

Serving Size: Makes approximately 6 2-cup servings
