Ingredients

1 small red onion
1 tbsp chopped fresh thyme
3 sprigs fresh oregano, finely chopped
2 sprigs fresh rosemary, finely chopped
1/4 tsp fine sea salt
Freshly ground black pepper
4 boneless, skinless chicken breast tenderloins each cut into 2 pieces
Directions
Peel the red onion and halve through diameter then cut each half into 4 wedges, for a total of 8 pieces of onion. Set aside.
In a shallow dish, combine the thyme, oregano, rosemary, salt and pepper and mix well. Roll each piece of chicken in the herb mixture so that it is well coated. Thread each skewer alternating pieces of chicken and onion so that on each skewer there are 4 pieces of chicken and 4 pieces of onion. Grill for about 3 minutes on each side or until cooked through.
Serving Size: Makes 2 skewers, one per person
