Da Bomb Butternut and Chicken Boup

    Bay Leaf, 1 tbsp, crumbled (remove)
    Paprika, 1 tsp (remove)
    Pepper, black, 1 tsp (remove)
    Chicken Breast (cooked), no skin, roasted, 1 breast, bone and skin removed (remove)
    Chicken Broth, 6 cup (8 fl oz) (remove)
    Celery, raw, 1 stalk, large (11"-12" long) (remove)
    Garlic, 3 cloves (remove)
    Ginger Root, 1 tsp (remove)
    Onions, raw, 1 large (remove)
    Parsley, 1 cup (remove)
    Jalapeno Peppers, 1 pepper (remove)
    Sweet potato, 1.5 cup, cubes (remove)
    Butternut Squash, 2 cup, cubes (remove)


Really couldn't be easier.
Chop all your veggies.
Put everything in the pot except for the sour cream. Bring to a boil, then simmer for 45 minutes to 1 hour.
This will ensure you get a lot of flavor from the chicken and it will become more tender.
Strain it through a colander.
Remove chicken& chicken pieces
Blend buternut and veggie mixture till you have a very think lumpy paste. You can use a potatoe masher, but a blender works really well.
Add the paste to the soup liquid and stir.
Pick all chicken meat from the bones, and shred the chicken breast with your fingers (don't burn yourself) and add to your soup.
Stir in 2 tbsp sour cream (or whipping cream) witha whisk.
Serve and enjoy.
