1 1/2 cup whole wheat pastry flour
1/2 + 2 T cup granulated sugar
1/2 + 2 T Splenda, granular
1/2 cups sweetened flaked coconut
1/3 cup chopped pecans
1/3 cup raisins
2 t baking soda
1 t salt
2 t ground cinnamon
1/2 c unsweetened applesauce
2 large eggs
2 c grated carrots
20 oz can crushed pineapple, drained
Frost with Berta's Lite cream cheese frosting, if desired.
