IntroductionI needed something fast for me to take with me to eat right after working out (I usually head to work straight from the gym), and this was the easiest, most nutritious thing for me! I needed something fast for me to take with me to eat right after working out (I usually head to work straight from the gym), and this was the easiest, most nutritious thing for me!
5 turkey sausage links
.5 sweet onion chopped
1 tsp olive oil
3 medium sized mushrooms chopped
salt and pepper to taste
.5 cup 2 % lactaid milk
1/3 cup of shredded mozzarella (I used rice mozzarella since I'm also lactose intolerant)
Remove and add sausage
Cook sausage until browned and cooked through
While the sausage is cooking, mix 7 eggs and milk together (whip thoroughly), add cheese, mix, add salt and pepper
In a 12 muffin pan, add egg
Gently drop in the onions and mushroom
Chop the sausage links and evenly distribute into the 12 muffins.
Bake at 350 degrees for 20 minutes
Wrap individually and bring with you to work. They are fine to put into the freezer as well!
