Introduction

You'll never miss those processed barbecue beans again! All ingredients used, down to the spices, are organic...the prep time seems a bit out of control, but it's based on using dried beans...they're lower in sodium and have a much firmer texture than canned. Number of Servings: 4

Ingredients

    .5 cup dried red kidney beans
    1 medium Jalapeno pepper, chopped
    .25 tsp chopped red onion
    4 tbsps water
    2 tbsps tomato paste
    2 tbsps extra virgin olive oil
    Cumin and chili powder to taste


Directions

Cook beans according to package directions; drain, set aside;
In a medium pan add onion to olive oil and saute until just golden; add tomato paste and water, stir until smooth;
Stir in pepper, spices and beans;
Simmer 15 mins

Serving Size: Makes 4 1 cup servings
