Introduction

A yummy fairly healthy friendly meal, snack, or appetizer. Serve wrapped in lettuce, or in lettuce cups. Number of Servings: 6

Ingredients

    -1.5 lbs ground turkey
    -1/2 cup teriyaki sauce *
    -1/4 cup peanut butter *
    -1 medium cucumber chopped
    -1/2 cup carrot, shredded
    -1/4 cup mint leaves, torn
    -salt and pepper, as desired to taste
    -Lettuce leaves for serving

    * Ass more for additional flavor, if desired

Directions

1. In a skillet, brown the turkey and drain, if needed
2. Add teriyaki sauce and peanut butter, mix well
3. Add cucumber, carrot, and mint;
add salt and pepper to taste.
Simmer for a few mintues.
4. Wrap small amount in a lettuce leave and serve.

Serving Size: Makes 6 servings (approx...based on how used/served)
