Crispy Omlette Burrito, aka "Egg Cookie"

Introduction

Ingredients

    ~ 5 eggs (I usually use only 1-2 real eggs and the rest as egg substitute)
    1 cup (or more) fresh shredded cabbage
    1 cup sliced fresh mushrooms
    2 TB milk
    1/4 tsp salt
    1/2 tsp pepper
    6 whole wheat or multigrain tortillas

Directions

In a large nonstick skillet over medium to medium-high heet, add cabbage and mushrooms. Saute for about 3 minutes, making sure to stir constantly.


Add eggs, milk, salt, and pepper to a separate boil and mix with a whisk . Add egg mixture to skillet and mix with the veggies, stirring constantly. Cook until eggs are well-cooked but still pretty moist. Move eggs to a plate.


Place approximately 1/3 cup of egg mixture onto center of tortilla and then fold the sides of the tortillas over each other like an envelope. Press down on the top of the tortilla using a large, flat spatula to "seal" it shut and flatten the egg cookie. Repeat until all tortillas have eggs inside them.


Spray the tortillas with a tiny bit of non-stick cooking spray, and return tortillas to skillet. Continue to flatten the tortilla as much as possible using the spatula. Cook approximately 3 minutes per side or until each side is a toasty brown color.

Eat immediately, while they are warm and crispy!
