Low Fat Chicken Cacciatore

Number of Servings: 6

Ingredients

    6 - 100 g(3.5 oz) chicken breasts
    2 tsp salt (to taste)
    1 tsp freshly ground pepper (to taste)
    8 fat free saltine crackers (Crushed for dredging)
    1 large red or green pepper, chopped
    1 onion, chopped
    3 garlic cloves, finely chopped
    1-1/2 c. low sodium chicken broth
    1 28 oz can diced tomatoes with juice
    1-1/2 tsp dried oregano leaves
    2 tsp chopped basil


Directions

Put 1/4 c. of broth in Slow cooker. Dip the chicken in another 1/4 c of broth and then coat with cracker crumbs. Add chicken to slow cooker. Mix remaining ingredients together and pour over chicken. Cook on low 5-7 hours. Serve hot by itself or over rice.
