Tilapia Ceviche

Ingredients

    *Tilapia, 16 oz (remove)
    Onions, raw, .5 cup, chopped (remove)
    Jalapeno Peppers, 1 pepper (remove)
    Red Ripe Tomatoes, 2 plum tomato (remove)
    Cucumber (peeled), 1 cup, pared, chopped (remove)
    Lime Juice, 1 cup (remove)
    Olive Oil, 2 tbsp (remove)
    *Salt - Iodized Sea Salt, 1.5 tsp (remove)

Directions

Chop tilapia into 1/2 inch pieces and marinate in one cup of lime juice. Cover and refrigerate for at least 2 hours or until fish is white. Pour off and discard lime juice. Cover fish with clam or clamato juice. Chop vegetables and add to fish. Season to taste with salt. Top with olive oil and stir.
