Pumpkin "One Minute" Flax Muffin

Introduction

I found this recipe the other day and really wanted to try it. So this recipe is truly not my own. But I wasn't ready to use up 242 calories for one muffin. So I tweaked the recipe a bit. Thought I would eliminate the fat and the whole egg, and substitute some of the flax meal for oatmeal. I found this recipe the other day and really wanted to try it. Thought I would eliminate the fat and the whole egg, and substitute some of the flax meal for oatmeal.
Number of Servings: 1

Ingredients

    1 tsp Baking Powder
    1-2 packets Splenda
    1/4 C Egg Substitute
    1 tsp Cinnamon
    1 tsp Cocao Powder
    1/4 C Canned Pumpkin(not the mix)
    2 T Ground Flax Seed Meal
    2 T Oatmeal

Directions

Combine all the dry ingredients, then combine the wet ingredients, mix together, Spray a mug with Pam spray.
Microwave for one Minute.
Serve with Plain LF/FF Yogurt and fruit. Makes a great breakfast. Love that there is no flour or sugar in the recipe.
