Campanelle Pasta Salad

Introduction

nice salad to have in the summer nice salad to have in the summer
Number of Servings: 6

Ingredients


    cooked Pasta, Campanelle, 16 oz )
    Olive Oil, .5 cup
    Onions, raw, 1 small chopped
    Garlic, 2 cloves minced
    Tuna, Canned in Water, 1 can drained
    2 cup cherry tomatoes halved
    Artichoke Hearts marinated 8 oz, quartered
    Thyme, fresh, 3 tbs
    Parsley, .25 cup

Directions

1. reserve 1 C of cooking water from pasta

2. in skillet saute in half the oil, onion, garlic for 5 minutes then add tuna.

3. spoon in tomatoes, artichokes, thyme and cook until tomatoes begin to soften (10 minutes)

4. fold in pasta, add remaining oil add parsley and toss

can be served warm or even cold.

Serving Size: Serves 6
