Veggie "Stramble"

Submitted by: CHENIA

Introduction

Part stir-fry, part scramble, this dish packs in the fiber and protein. You can use soy sauce if you do not mind the extra sodium instead of the liquid aminos. Great post-workout meal. Ingredients

    1 tsp. olive oil
    3/4 cup small broccoli florets
    2 stalks of celery, chopped
    5 baby carrots, quartered
5 spears of asparagus cut into bite size pieces (fresh or cooked)
    2 green onions, chopped
    1 tsp minced garlic
    3/4 cup cooked brown rice
    4 large egg whites
    1 tsp Bragg Liquid Aminos

Directions

Heat oil in a nonstick skillet over med-high heat. Toss in celery, carrots, broccoli and asparagus (if using fresh, if asparagus is cooked, just set it aside for now.). Stir fry for a minute till just starting to get tender, add garlic and toss. Add cooked rice and toss to blend with veggies and sprinkle in aminos. Let stir fry for a minute then push rice and veggies to outer edges of pan so you have an empty center. Pour your egg whites in the center and stir them around a bit til they start to cook. Not not mix them into the rice until almost cooked through, then toss the whole thing together to blend the cooked eggs with the rice. Toss in the cooked asparagus if you set it aside, and green onion and heat through.
