Mediterranean Turkey Casserole

Ingredients

    Turkey tenderloin - 2 lbs
    Crushed Tomatoes, 1 can
    Beans, black, 2.5 cup
    Red Wine, 12 fl oz
    *Couscous (dry), 1 cup
    Zucchini, baby, 1 medium
    Onions, raw, 0.5 large
    Mushrooms, fresh, 10 medium
    Basil, 2 tbsp
    Peppers, sweet, red, fresh, 1 large
    Sliced black olives - 1/3 cup
    Feta Cheese - 50 grams

Directions

Preheat oven to 325 degrees

Cut turkey tenderloin into bit size pieces and brown in olive oil.

While turkey is browning, cut pepper, mushrooms, onion and zucchini into nice chunks.
Add raw vegatables to a casserole dish. Stir in can of crushed tomatoes, red wine, and sliced olives. Add dry couscous and basil. Stir well.

Once turkey has browned, add to other ingredients. Mix well.

Place pan in oven - bake for 45 minutes. Remove, stir again, and crumble feta cheese evenly over top - return to oven and bake another 15 min.

Makes 8 servings.
