This is great for brunch or a quick breakfast for supper. I often have these ingredients on hand, so it's perfect for those nights when you don't have a plan or the plan falls through. Ingredients

5 eggs, beaten
splash of milk (I used Lactaid 2%)
2 cups spinach
4 shallots
1 cup fresh mushrooms, diced
1 cup Sargento reduced fat 4 cheese Italian
2 links Al Fresco garlic chicken sausage
Directions
In a medium sautee pan, sautee shallots in olive oil until translucent. Add the mushrooms and sautee until cooked through, about 2 minutes. Add remainder of ingredients and stir.
When eggs begin to set at the edge transfer the pan to a 425 degree oven. Bake for 18 minutes or cooked through. Let cool a few minutes before slicing.
