Topsy Turvey Chicken

Ingredients

    Ingredients:


    Chicken Breast, no skin, 2 breast, bone and skin removed (remove)
    Chicken Broth or Bouillon, 1.5 cup (8 fl oz) (remove)
    *Del Monte Petite Cut Diced Tomatoes, 1.5 cup (remove)
    *White Rice, medium grain, .5 cup (remove)
    *Brown Rice, long grain, .5 cup (remove)
    Margarine butter blend, 60% corn oil margarine and 40% butter, 2 tbsp (remove)

Directions

Cover chicken with butter. Bake at 450 degrees for 30 minutes. Boil broth, tomatoes and season to taste. Sprinkle rice over chicken. Pour broth mixture over chicken and stir to blend evenly. Bake, covered, 30 more minutes.

  • I have had this recipe fo 26 years! Here is our awesome variation: When adding the rice also add 3/4 cup each of chopped onion and green bell pepper. To the boiling tomatoes also add 1/2 teaspoon or more of rosemary. Oh so yummy! - 9/23/11
