2 cups purple cabbage, shredded
1/2 yellow or orange bell pepper, chopped
1/4 cup chopped cilantro
1/4 cup Reduced Fat Vegenaise
1 tsp lime juice
1 tsp ground cumin
1 tsp rice vinegar
1 tsp agave nectar
1/4 tsp onion powder
1/4 tsp fresh ground pepper
salt to taste
In a smaller bowl, combine Vegenaise, lime juice, cumin, vinegar, agave nectar, onion powder, pepper, and salt. Pour over salad ingredients and toss well to coat.
Let stand for at least an hour before serving, or overnight, to allow the flavors to blend.
