Robin's blueberry bran muffins

Introduction

Fantastic muffins! Best I've ever eaten. Fat-free blueberry muffins with only a 3rd the calories as the donut shops. Fantastic muffins! Best I've ever eaten. Fat-free blueberry muffins with only a 3rd the calories as the donut shops.
Number of Servings: 12

Ingredients

    1 1/2 c bran cereal
    1 cup milk
    1/2 c apple sauce
    1 egg
    1/2 tsp vanilla

    1/4 c Splenda brown sugar blend
    1/2 c white flour
    1/2 c whole wheat flour
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1.5 c frozen or fresh blueberries
    *flax to sprinkle on top if you like

Directions

Heat oven 375 and spray muffin pan with fat free spray.
Pour milk in med sized bowl with bran and set aside for 3 minutes. Next, blend together the egg, apple sauce, vanilla and add to bran mixture and let it all absorb for another 3 minutes. In a separate small bowl, mix sugar, flours, salt, baking soda, and baking powder. Once that is blended, add it to the bran mixture and stir just to combine a little. If you are using fresh blueberries, they can be added at the same time as the flour but if you're using frozen, mix your batter a little first before adding frozen blueberries. (The reason is that the color in frozen blueberries runs the more you stir it. It's a visual choice to try to avoid it, not a technical direction.) :)
Bake for 24-25 minutes.
