Christmas Pasta

Ingredients

One large Zuchinni - Cut into bit sized peices
2 cups of Cherry Tomatos
One shallot
6 ounces Tilipia (or halabit)
2 servings of Penne Pasta - Whole Wheat
Dry White Wine - 2 splashes
Garlic Salt - to taste
Pepper - to taste
Directions
Makes 2 seervings (perfect date dish)
Cut Zuchinni into bit sized peices
Wash and dry whole cherry tomatoes
Cut Shallot into thin strips
Cut Fish into bit sized peices
In a pot, Boil water for pasta. Once you get a rolling boil add in whole wheat pasta. (Whole Wheat pasta takes a few more minutes to cook)
Hit a large non stick skillit with a spray of no calorie olive oil. Add Shallots, cook until slightly soft, add in zuchinni and fish. Saute lightly till fish is almost fully cooked (about 4 minutes) Add Cherry tomatoes and cook till the tomatoes are about to pop. Turn down heat and pour in a splash of dry white wine and deglaze the pan.
Drain pasta, and add pasta into the skillet and mix all together. Add garlic salt and pepper to taste.
