Thick n' Rich Wine Mustard

Introduction

This is an extraordinary homemade white wine mustard, flavoured with malt vinegar and made rich and smooth with eggs, simmered over a water bath. Makes about 2 cups, a great Christmas gift with some home-made pretzels and some German beer! Ingredients

    1/2 cup white sugar
    3/4 cup ground dry mustard
    1/4 cup white vinegar
    1/4 cup malt vinegar
    1/2 cup dry white wine
    3 eggs, beaten
    pinch of salt

Directions

Over a simmering water bath in the top of a double-boiler, whisk together sugar, mustard, vinegars, wine, and eggs.
Cook while whisking constantly, for about 7-8 minutes, or until thick.
Allow to cool completely, then bottle and place in the refrigerator.
Stores well in the refrigerator for up to 2 months.
