White Bean Soup

Introduction

Number of Servings: 4

Ingredients

    1 onion, finely chopped
    3 garlic cloves, minced
    1 celery ribs, finely chopped
    1/4 large red bell pepper, finely chopped
    1-1/2 cup low-fat low-sodium chicken broth
    2 (15 ounce) cans white beans, drained and rinsed
    1 teaspoon cumin
    1/2 lemon, juice of
    1 tablespoons cornstarch

Directions

1. In a pot, combine the first six ingredients and simmer for for a few minutes.
2. Add one can of beans and cumin - cook for 5 minutes.
3. Puree soup in a blender and return soup mixture to the stove.
4. Add the other can of beans to the soup.
5. Combine the cornstarch with 1 1/2 tablespoons of water.
6. Add the lemon and the cornstarch to the soup and cook until thickened.

Serving Size: makes 6 servings
