Introduction

Ingredients

    Split Black Gram (Urad Dal) Laxmi brand, 1 cup
    White Rice, long grain, 2 cup
    Salt, 1 tsp

Directions

Soak urad dal and rice over night in two separate bowls. Blend separately in the morning and mix well with salt, keep it in a dark and warm place for 6 hours to ferment. Add more salt to taste, if necessary. Steam in the pressure cooker or in traditional Idli steamer in their own separate single cups ( as I do).

Tips: If you want to save time, just blend urad dal alone till really smooth and let ferment. Take 2 cups of Idli rava ( cream of rice), soak in enough water. Add to the blended Ural dal paste. The mixture should be thicker than dosa batter. Let ferment and steam. Serve hot with coconut chutney or rasam.

If any left overs, freeze in an air tight freezer bag or vaccum seal - will save for over a month.
