Introduction

Adapted from a "simply recipes" recipe. Theirs made too much egg mixture and used gruyere cheese. You could also sub some egg substitute, but I didn't have any this time!
Really quite an easy recipe, just takes some time.

Ingredients

    Pie crust, frozen, ready-to-bake, 1 crust, single 9"
    Egg, fresh, 3 large
    Heavy Whipping Cream, .65 cup
    Milk, nonfat, .65 cup
    Swiss Cheese, 6 oz
    Nutmeg, ground, .5 tsp
    Salt, 1 dash
    Pepper, black, 1 dash
    Sweet Red Onions, raw, 2 large or a pound
    balsamic vinegar, 1 tablespoon
    Olive Oil, 1 tbsp

Directions

Preheat oven to 350.
Slice and carmelize your onions. This can take up to 1 hour. Heat olive oil in a large, heavy-bottomed sauté pan on medium heat. Add the onions and sprinkle a little salt over them. Cook, stirring occasionally for 10 minutes, until the onions have softened and are translucent. Reduce the heat to medium low and cook for an additional 40 minutes, stirring occasionally, until the onions are well browned. Add balsamic vinegar and cook for 10 minutes more, until onions are completely caramelized. Remove from heat.
Bake pie crust according to directions. Usually you prick it a few times with a fork and bake for 10 minutes.

Place pie pan on a baking sheet to catch any run-off there might be. Sprinkle half the cheese evenly over the bottom of the crust. Spread onions over the cheese and then top with remaining cheese. In a medium bowl, whisk together milk, cream, and eggs. Season with nutmeg, salt, and pepper. Pour over cheese.
Transfer to oven, and bake until just set in the center, 30 to 35 minutes. Cool on a wire rack for about 10-15 minutes before slicing.
*the 8 side dish slices are 250 cals.
