Introduction

A tasty and filling breakfast that is high in protein, low in fat and carbs and less than 400 calories! Even my kids love this one:) A tasty and filling breakfast that is high in protein, low in fat and carbs and less than 400 calories! Even my kids love this one:)

Ingredients

    Ingredients:

    6 large egg whites
    1 large whole egg
    1 tsp. olive oil
    1/2 cup sliced mushrooms
    1/4 cup chopped onions
    1/2 cup sweet peppers (red, yellow or orange) chopped
    1 cup fresh spinach
    1/2 cup chopped fresh tomatoes
    3 Tbs. Kraft Mozza-Cheddar Light (26% Less Fat)
    1/3 cup black beans

Directions

1. Heat olive oil over med/high heat in a non stick frying pan. 2. Saute onions, mushrooms and peppers in olive oil till soft. 3. While veggies are cooking, whisk whole egg and egg whites together.
4. Push sauteed vegetables to one side of pan and add egg mixture. Scramble fry eggs.
5. When egg is almost cooked, stir in vegetables and add beans, tomatoes and spinach and heat until spinach is wilted and tomatoes are warm. Sprinkle cheese on top.
