Spinach Tofu Cakes

Number of Servings: 8

Ingredients

    1 box of Extra Firm Tofu
    1 TBS chopped onion
    2 scallion stalks
    1 tsp basil
    2 tsp parsley
    1/2 cup green peppers
    3 cloves of finely chopped garlic
    1 bag of baby spinach
    2 TBS whole grain flour
    2 TBS non dairy milk
    1 TBS flax seed
    1 TBS extra virgin olive oil
    Black pepper to taste

Directions

Thoroughly mix all ingredients. Use a potato masher or a large fork to break down the tofu. Form into patties (approximately the same diameter as the mouth of a standard tea cup). Place onto a treated baking sheet and refrigerate for approximately 1 hour (optional, but an important step to help the mixture hold its shape). Next, place on the middle rack of a preheated oven, to 425 degrees. Baked about 10 minutes then carefully flip over. Reduce heat to 350 and bake for another 10 minutes. Remove from oven and serve hot.

Serving Size: Makes about 8 patties, 1 patty = a serving
