Mini Pizzas

Ingredients

    # Whole Wheat English Muffin, 6 muffins
    # *Ragu Pizza Sauce, 1 jar
    # *Carrot Puree, 0.25 cup (1 jar baby food)
    # *Cheese Mozarella Shredded , (about 1/2 oz for each pizza)
    # *hormel pepperoni minis, 3 oz (about half the package is all you'll really need but you can add more if you like).

Directions

First warm the pizza sauce in a pot because you want to add the carrot puree and have the flavors really incorporated together. Then take apart the muffins (you'll have 12 slices). (You can toast them if you like crispier crust). Top with desired amount of pizza sauce. Sprinkle with cheese and pepperonis. (you can add other ingredients too like bell pepper, sausage, etc). Bake in the oven at 400 degrees for about 10 minutes or until cheese is melted and it smells awesome! Then enjoy! (These are fun to make with the kids and they'll never know they're getting extra veggies!)
