8 oz raw, peeled shrimp 1 tbsp olive oil 1 tsp minced garlic 1 can diced tomatoes 1/4 cup red wine 1/2 onion
Pasta or cooked spaghetti squash.
Heat olive oil in saute pan. Add garlic, saute briefly (be careful not to burn garlic.) Add onion and shrimp. Sauce 3-5 min. until shrimp are pink and onion is soft - remove shrimp from pan. Add tomatoes, wine, salt and pepper, red pepper flakes, and dash of basil, as well as chopped marinated artichokes or any other vegetable you would like to add. Simmer 13-15 minutes until sauce is reduced. Add shrimp and either pasta or spaghetti squash and cook 2-3 min. more until shrimp are warmed.
