1/2 cup wilted, chopped spinach
100 grams ham, diced
30 grams feta (or cheese of choice such as provolone)
1/4 cup chopped red pepper
salt & pepper to taste
Lightly grease a SMALL casserole dish. Sprinkle in ham, peppers and spinach. Break eggs open and place in casserole dish. Top with cheese and black pepper. (and salt if desired)
Bake for approximately 15 minutes.
