Non Fried Quinoa

Ingredients

    1 C quinoa, prepared according to directions
    1/4 C chopped onion
    1 C chopped carrots
    3 medium celery stalks, chopped
    1 garlic clove, minced
    1 Tbsp low sodium soy sauce
    2 egg whites
    2 whole eggs
    1 C chopped broccoli

Directions

Heat 2 Tbsp water in a medium skillet. Add onion and carrots and steam for about 5 minutes. Add remaining ingredients but broccoli and egg. Cover with lid and cook for 3 minutes.

Add cooked quinoa and broccoli to skillet; add water if necessary. Cover and steam for 3 minutes. Add eggs, stir until cooked through.

Serving Size: 6 1/2 C servings
