CousCous Salad

Introduction

My cousin taught me this recipe, & thus began my love of chopped salads. My cousin taught me this recipe, & thus began my love of chopped salads.
Number of Servings: 5

Ingredients

    1 can chickpeas rinsed ,drained
    1 large red (or yellow) bell pepper, seeded & chopped
    1 large tomato, seeded, chopped
    1 large cucumber seeded, chopped
    1 bunch scallions/green onions chopped
    1 cup cooked,cooled couscous~we like the large Israeli kind
    5 or so fresh basil leaves, chopped
    1 tbs extra virgin olive oil
    2 tbs balsamic
    salt to taste


Directions

Combine ingredients & enjoy~ good the next day for yummy lunch.
