Ground Pork and Quinoa stuffed bell peppers

Introduction

If your children don't like bell peppers, you can make meatballs with the filling instead. It is a bit moist, so if making meatballs you may want to add bread crumbs to thicken it. Ingredients

    one lb ground pork
    8 bell peppers
    one can tomatoes with green chilies, drained
    one cup quinoa, prepared as directed on box
    one tsp salt or to taste
    one tsp pepper or to taste

Directions

Prepare quinoa as directed.
Mix quinoa, ground beef, tomatoes, salt and pepper together.
Cut top off bell peppers and clean out seeds. Fill with pork mixture. Bake in 350 degree oven for 60 min
