Classic Split Pea & Ham Soup

Introduction

Number of Servings: 4

Ingredients

    1 Tbsp Olive Oil
    1 onion, finely chopped
    2 carrots, chopped
    1 garlic clove, chopped
    1 cup dried green or yellow split peas, picked over, rinsed & drained
    4 cups water
    1/2 cup slivered lean ham or Canadian Ham
    3/4 tsp salt
    1/4 tsp ground pepper

Directions

In a medium nonstick saucepan over medium heat, heat the oil. Saute the onion, carrot and garlic until softened, about 5 minutes. Add the split peas and water, bring to a boil. Reduce the heat and simmer, covered, until the peas aer tender, stirring once, about 1 hour.

Add the ham, salt and pepper, heat to serving temperature.

(I pureed/blended 1/2 of the soup for a creamy texture before I added the ham.)

Serving Size: Makes four 1 cup servings
