Chocolate Protein Enhanced Pumpkin Muffins

Ingredients

    1/4 Better 'n Eggs
    2/3 cup light brown sugar
    1 can (1 3/4 cup size) Pure Pumpkin
    1 cup skim milk
    1 cup whole wheat flour
    2 Servings (70g or 4 scoops) APC Chocolate Time-Release Protein
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1 tsp cinnamon
    1/2 (8 Tbsp) Special Dark Chocolate Chips

Directions

Preheat oven to 400.
Beat egg substitute with brown sugar until smooth.
Add pumpkin and milk.
Add baking soda, baking powder, salt, cinnamon, to wet ingredients. Mix well.
Add in whole wheat flour in 1/4 cup increments, mix batter until smooth, but not too thick/stiff.
Fold in mini chocolate chips.
Spray a nonstick mini muffin pan with cooking spray. Fill muffin tins 2/3 - 3/4 full.
Bake for 25 minutes until a toothpick poked into the muffin center comes out clean.
Allow to cool in muffin tins for 5 minutes.
Remove from muffin tins and allow cool to room temp if storing. Otherwise ENJOY WARM!

Recipe usually yields about 18-22 muffins depending on amount you put in the tins.
