Easy Bean Salad (Chickpea and Black Bean)

    230 gr (1.5 cups) Chickpeas, rinsed and patted dry
    230 gr (1.5 cups) Black Beans, rinsed and patted dry
    140 gr (1 cup) Red Onion, chopped or diced
    175 gr (1.5 cup) Celery, diced
    230 gr (1.75 cups) Red, Yellow and Orange Pepper (1/2 pepper each)
    1 Cup Cilantro (or Parsley), chopped leaves and stems
    1/2 tsp crushed red chili peppers
    2 T Olive Oil
    3 T Balsamic Vinegar (or Red Rice Wine Vinegar)


Rinse fully the beans and allow to dry on paper toweling. Add remaining ingredients, tossing gently. Refrigerate. Serve on a bed of romaine leave(s) and (1/2) orange slices.
