Aussie Muffin Bites

Introduction

These mini-muffins mimick the Aussie Bites you can get at Costco sometimes. The original recipe used 2 sticks of butter and no applesauce; this version is a little healthier. Ingredients

    Ingredients:
    7-Grain Cereal (Montana Wheat), 2 cup
    Whole Wheat Flour, 2 cup
    Splenda Brown Sugar Blend, 1/3 cup
    Coconut - Baker's Flaked sweetened 1.25 cup
    Sunflower Seeds, with salt added, 1/3 cup
    Flax Seed, 3 tbsp
    Raisins, 1/3 cup
    Cranberries, dried, sweetened (craisins), 1/3 cup
    Dates, 1/3 cup, pitted, chopped
    Honey, 1/4 cup
    Butter, salted, 1 stick
    Baking Soda, 1 tsp
    2 TBL hot water
    Applesauce, unsweetened, 1/2 cup
    Egg, fresh, 3 large


Directions

Chop the dried fruit into very small pieces. Combine all dry ingredients down to the honey in a bowl. Melt the honey and butter together in the microwave. Mix baking soda with hot water, then add to the butter mixture. Beat the eggs & applesauce together. Add butter mixture and egg mixture to the dry ingredients and mix well (by hand).

Put tablespoons of batter into greased or lined mini-muffin tins. Flatten the mixture the slightly.

Bake at 350 deg for about 10-12 minutes until golden brown.

Serving Size: Makes 72 mini-muffins (bite size)
