Toya's Turkey meatloaf muffins

Introduction

Turkey meatloaf made in muffin pan w yellow squash and spinach Turkey meatloaf made in muffin pan w yellow squash and spinach
Number of Servings: 12

Ingredients

    ground turkey (one package)
    1 large egg
    1 cup bread crumbs
    1 cup broth
    half cup parmesan or asiago cheese
    1 large yellow squash
    half 10 oz. package of frozen spinach
    1 tbsp olive oil mixed in or brushed on top
    1/4 cup onion
    1/4 cup garlic
    season with pepper to tasted (and salt if desired)

Directions

mix bread crumbs in broth first and let sit while mixing other ingredients in a bowl (minus ground turkey). add ground turkey to bread crumb and broth mix...then add remaining ingredients...add cheese last

Serving Size: makes 12 muffin sized meatloaf portions
