Lentil Tortellini Salad

Introduction

(1/2 cup servings) (1/2 cup servings)
Number of Servings: 8

Ingredients

    Dressing
    cup olive oil or oil
    1/3 cup white balsamic or cider vinegar
    teaspoon salt
    1/8 teaspoon coarsely ground black pepper
    2 dashes hot pepper sauce
    2 garlic cloves, minced

    Salad
    1 cup lentils you can use uncooked and cook with tortellini or canned
    1 (7oz pkg) cooked tortellini
    cup chopped fresh parsley
    cup thinly sliced green onion
    2 tablespoons chopped fresh oregano or 2 teaspoons dried oregano leaves
    1 medium tomato, seeded, chopped.


Directions

In jar with tight-fitting lid, combine all dressing ingredients; shake well

Meanwhile combine all other ingredient and pour dressing over salad, toss to coat cover; refrigerate 2 hours or until chilled.
