Slow Cooker Lentil Soup

Ingredients

    Lentils 2 cups
    carrots 3, chopped
    celery 3 stalks chopped
    onion 1 cup chopped
    thyme 1 tsp
    water or broth 8 cups
    kale, 2 cups
    balsamic vinegar 1 Tbsp

Directions

Rinse and drain lentils. Place the first 7 ingridients into the crock pot. 30 minutes before serving add chopped kale and balsamic vinegar.

Crock pot on high cook for 6 hours or set crock pot on low for 10 hours

Serving Size: 8 to 10
