Microwave Mushroom Meatloaf

Introduction

This microwave meatloaf is better than any baked meatloaf I have ever had. My hubby isn't a mushroom fan, so I just leave them out of his half. You can leave them out all together, if you prefer. Number of Servings: 8

Ingredients

    2 slices Fresh bread (cut into cubes)
    1/3 cup Milk
    1 tbsp Worcestershire sauce
    cup Parmesan (powdered)
    tsp Garlic powder
    1 tsp Salt
    tsp Pepper
    2 Eggs
    2 lbs Ground beef
    1 can Drained mushrooms
    4 tbsp Catsup (for glaze)
    4 tbsp Brown sugar splenda (for glaze)
    2 tsp Mustard (for glaze)

Directions

1. In a large bowl combine all ingredient except the glaze ingredients and combine with hands.

2. Put into a microwave bundt pan (or cake pan with upside down glass in the center).

3. In separate bowl combine all ingredients for glaze and mix well.

4. Top meatloaf with glaze and cook for 15 minutes on high. Check and continue cook in 5 minute intervals until corners are done.

5. When the meat is done, poor out excess grease & serve. Note: I use a turkey baster to remove excess grease.

Serving Size: makes about 1 1-2 inch slices
