Introduction

Use up leftover potatoes because you Sparked and did not eat all of them yesterday!! Use up leftover potatoes because you Sparked and did not eat all of them yesterday!!
Number of Servings: 6

Ingredients

    425 grams potatoes (already cooked), sliced
    1/4 cup whole milk
    6 eggs
    1 tomato, cut up.
    very sharp cheddar cheese, grated

Directions

Beat eggs with milk, add potatoes and tomato, put Pam in frying pan and cook like an omelet. Add grated cheese at end.

Serving Size: Makes 6 wedges
