Number of Servings: 4

Ingredients

    1 TBSP olive oil
    1 1/2 lb. boneless chicken breast, cubed
    2 c broccoli florets ( no need to chop them)
    1 cup green or red peppers (cut into strips)
    1 can (10.5 oz) Campbell's chicken gravy
    1 TBSP ground ginger
    4 cups hot cooked rice (I used Jasmine rice in this recipe)

Directions

Heat oil iln skillet. Add chicken and stir-fry until browned. Remove chicken.
Add broccoli and pepper and cook until tender-crisp. Return chicken to skillet.
Add gravy, soy and ginger. Heat through. Serve over rice.
serves 4
