Ultimate Italian Plum Tomato Sauce


Number of Servings: 12


    1/4 cup olive oil
    1 onion, diced fine
    1 carrot, diced fine
    1 t. dried basil
    1 bay leaf
    1 can (39 oz) can plum tomatoes with liquid
    1/4 to 1/2 cup pineapple or other fruit juice


Heat the oil i a 3 qt. saucepan over medium-high heat. Stir in onion, carrot, basil, and bay leaf. Reduce heat to medium. Saute vegetables, stirring frequently until they are softened, about 10 minutes. Stir in the tomatoes, liquid and juice. Reduce heat, cover the pan and simmer. Stir occasionally for about 20 minutes. Stir in the salt and pepper to taste. Simmer another 10 minutes.
