Potato Squash Cream Soup

Introduction

Quite creamy wtihout the buttter or cream usually found in potato soups. Quite creamy wtihout the buttter or cream usually found in potato soups.
Number of Servings: 5

Ingredients

    4 medium potatoes
    1 small onion
    1 bunch green onions
    1 medium summer squash
    1 tbsp each of curry, paprika and garlic powder
    salt & pepper to taste
    2 tbsp olive oil (flavoured if you have it and like it)
    1 cup low-fat yoghurt

Directions

This is a recipes for days when you have no time for cooking.
The onion is chopped and dropped in the oil on low heat while you put the chunks of potato and onions in a food processor. When the onion has softened add the spices and the veggies in with 3 cups of water. let it simmer for about 40 min. Now drop in the yoghurt (and a few leaves of fresh basil if you can get them) and use an immersion blender to get your soup on. And that's it, enjoy!
